Every year I try to make a cake for Easter, but I think someone went a bit far here?
I gotta give these girls credit though; it should be enough cake to serve 300 people without baking several cakes.
Talking about cakes- Here is my favorite recipe for- Carrot Nut Cake. My mother gave me the recipe and my kids thoroughly enjoy consuming it after the Easter dinner.

CARROT NUT CAKE WITH CREAM CHEESE FROSTING
2 cups sugar
1 1/2 cups vegetable (Wesson) Oil
4 eggs-large
-cream together for a couple of minutes.
Add and sift together (Yes, I said “Sift. Sifting will create a soft cake)
2 cups flour
2 tsp soda
2 tsp cinnamon
1 tsp salt
Mix for a minute or so, until blended together.
Add 3 heaping cups of shredded carrots
and one cup of chopped walnuts.
Bake in a greased and floured 13″ x 9″ pan, or two 8″ round pans.
Oven 350@ for 35-40 minutes, or until toothpick inserted into cake comes out clean.
Set on metal rack until cool, then frost.
Cream Cheese Frosting
1 8-oz cream cheese
1 stick of margarine or unsalted butter
1 box of powdered sugar, or 4 cups from a bag
1 tsp vanilla
1 cup nuts (finely chopped)-sprinkle on top of icing to finish off the cake.
ENJOY!
